Idiyappamin Prosper, TX
Also called string hoppers, noolappam, nool puttu
Idiyappam, also called string hoppers, is a South Indian classic from Kerala and Tamil Nadu: rice-flour dough pressed into fine noodles, laid in small nests and steamed until soft and light. It is the dish our name comes from (“Idiyappa Kadai” means “idiyappam shop” in Tamil), and at MIK Cloud Kitchen in Prosper, TX it is cooked fresh in our kitchen for pickup.

How idiyappam is made
Rice flour is mixed with hot water into a soft dough, pressed through a fine mould straight onto steaming plates and steamed for a few minutes. The result is a delicate nest of rice noodles with a mild taste that soaks up whatever it is served with.
How we serve it
Every idiyappam comes with your choice of side: kadala curry (a black chickpea curry), stew, coconut milk or coconut jaggery. The curries make it a savoury meal; coconut milk or coconut jaggery make it gently sweet.
Want something heartier? Try Idiyappa Kottu: idiyappam chopped and stir-fried on the griddle with vegetables and spices.
Idiyappam: common questions
Is idiyappam the same as string hoppers?
Yes. String hoppers is the Sri Lankan name for idiyappam. In Kerala it is also called noolappam or nool puttu.
What do you eat idiyappam with?
A savoury curry such as kadala curry or stew, or something sweet such as coconut milk or coconut jaggery. At MIK Cloud Kitchen you choose one of these four sides with every idiyappam.
Is idiyappam gluten-free?
Traditional idiyappam is made from rice flour, water and salt, with no wheat. Our kitchen also uses wheat, dairy and nuts (peanuts, almonds), so if you have an allergy, please ask us on WhatsApp before ordering.
