What makes a good appam

The rice and coconut batter is left to ferment, which gives appam its gentle tang and airy texture. It is swirled around a hot appachatti, a small wok-like pan, so the thin batter sets into a lacy rim while the centre steams soft.

How we serve it

Every appam comes with your choice of side: kadala curry (a black chickpea curry), stew, coconut milk or coconut jaggery. Appam with stew is the classic Kerala pairing; coconut milk makes it mild and sweet.

Appam: common questions

What is the difference between appam and dosa?

Both are made from fermented rice batter, but appam batter has coconut and is cooked in a curved pan, so it has a soft, thick centre and lacy edges. A dosa is spread thin on a flat griddle and comes out crisp all over, usually with sambar and chutney.

Are appam and hoppers the same?

Yes. Hoppers is the Sri Lankan name for appam. In Kerala it is also called palappam.

What goes best with appam?

Stew is the classic choice, kadala curry is heartier, and coconut milk or coconut jaggery make it sweet. You pick one of these four sides with every appam.
